THE CHARCOAL GRILL

The origin of our first Charcoal Grill was a special request from the GM of the Hellenic Republic restaurant group, one of Masterchef judge George Calombaris' restaurants. It wasn't that they couldn't find a grill, there are certainly no lack of them on the market. They wanted something better, a grill built like a tank, that could handle the rigours of a commercial kitchen. They were also looking to reduce the amount of charcoal and firewood that they were having to use to keep their grill hot. 

We developed a new grill design, focusing on performance and longevity. Every single part of the grill was over-engineered to ensure that it would handle the rough environment of a commercial kitchen for years.

We said, "Let the over-engineering begin".

 
 
 

The legs of the grill are made with 80x80mm Stainless Steel, with a wall thickness of 3mm. At the base of each leg is a welded insert with a heavy duty adjustable foot to get the grill sitting level regardless of ground conditions.

The outer body of the grill is 2mm thick folded Stainless Steel, with all seams professionally welded and brushed back. You'll note that the walls of the grill are very thick - this is to allow room for the refractory lining. First we line the walls and base of the grill body with 50mm of Calcium Silicate Board, a refractory material with outstanding insulating qualities rated to over 1000°C. This layer prevents heat from escaping through the walls and floor of the grill body, keeping the heat in the grill where you want it.

We then fit 25mm thick firebricks to the four walls, before installing the single-piece refractory floor panel. We cast this panel in a smooth mold using stainless steel fibre reinforced refractory castable, rated to 1350°C. The idea behind the single-piece floor system came from feedback on our first grill at Hellenic Republic which was lined with firebrick tiles - the chefs were finding it tricky to shovel out the hot coals as their shovel would catch on the edges of the tiles. By using a single, smooth refractory panel we eliminated this issue and the chefs have found the grills much easier to use and clean.

Finally, the cooking surface. Our grill sections are made with 8x8mm Grade 316 Stainless Steel Bar, TIG welded into laser-cut 6mm end sections. This is the highest grade of stainless steel available. The bars are welded in place on a 45° angle to maximise the area over the charcoal, and giving your food those clear sear lines that you're after. The grill sections are fully removable.

Grill Heat Up Time

HEAT-UP TIME - APPROXIMATELY 1 HOUR

The heat-up time of the grill depends a great deal on the fuel that your using, but if you use good quality charcoal or firewood (or a combination of both) you should have the grill at full operating temperature within an hour.
