We were honoured to be asked to design and construct a full custom Wood Fired Oven for George Calombaris' new restaurant - the Hellenic Republic in Williamstown. George and his team gave us a detailed design brief; they would be cooking wood fired fish and meats at temperatures between 200 and 250 degrees C. While they loved our brick ovens, they had a very limited space - plenty of width, but little depth. To overcome the issue of space, we designed an oven that is fired from underneath. The flames and smoke are passed through channels under the oven floor, into the main chamber above. We were very pleased with the result!
